Genevan woolly pig

The woolly pig, also known as Mangalica, is an ancient breed from Eastern Europe. Today, it is one of the most prized by top chefs for its exceptional meat.

Raised in the open air for at least 12 months, these pigs benefit from a slow, natural lifestyle, incompatible with factory farming.

Extremely hardy, the woolly pig develops abundant fat to cope with harsh winters. Its slow growth allows a remarkable infiltration of fat, offering unequalled marbling.

The meat is red, marbled with furrows of creamy white fat that melts at low temperatures. The result: meat that melts in the mouth, with a powerful flavor and incomparable taste and sensory qualities.

Preparation: Woolly pork is prepared in exactly the same way as classic pork.
