Pistachio sausage
Carefully prepared by our butcher, the pistachio sausage is a delicious treat that lends itself particularly well to winter evenings.
Its simple, natural recipe is surprisingly flavorful and showcases the know-how of our canton.
Genevan pork, white salt, pepper, garlic, nutmeg, pistachio, cognac, beef casings.
Pour cold water into a saucepan, add the pistachio sausage, bring to the boil, then lower the heat to a gentle simmer. Finally, leave to cook for 45 minutes, and you're done!

Longeole PGI
Prepared with care by our butcher, Longeole is THE typical Geneva cooking sausage. It is said to have been invented by a certain Père Longeot, from the Abbey of Pomier (in present-day Présilly).
Genevan pork (meat, fat, rind), nitrite salt*, pepper, garlic, nutmeg, fennel, beef casings. *Nitrite salt is required for the "Longeole" appellation, and this may soon change.
Pour cold water into a saucepan, add the Longeole, bring to the boil, then lower the heat to a gentle simmer. Finally, leave to cook for between 2h30 and 3h, and you're done!
