Prepared with care by our butcher, Longeole is THE typical Geneva cooking sausage. It is said to have been invented by a certain Père Longeot, from the Abbey of Pomier (in present-day Présilly).
Genevan pork (meat, fat, rind), salt (nitrite or non-nitrite, according to choice), pepper, garlic, nutmeg, fennel, beef casings.
